Abstract
Food, who doesn't like to enjoy a good plate of food that generates nostalgia for its great and rich flavor?, but, have you ever wondered about the origin, history and cultural importance surrounding the dish you have on your table in front of you? For the purpose of this work, we will review the background and history of the result of the "American melting pot": soul food, in addition to reviewing the concept of soul food itself, the impact and cultural value of soul food as a product of the implantation of societies from Africa to the American continent, its most representative and distinctive elements, the differentiation between what corresponds to soul food and the one known as southern food through a historiographic and cultural analysis that leads us to a reflection on its value as a factor of identity for the African-American community.
